Natalie Slater - Natalie Slater is the Marketing Manager of Upton’s Naturals and author of the vegan cookbook Bake and Destroy: Good Food for Bad Vegans

Nicole Sopko — Nicole Sopko is the Vice President of Upton's Naturals, and vegan cafe, Upton's Breakroom as well as the owner of Nature Sanctuary in Chicago, IL and Nature Yoga Sanctuary & Cafe in Oak Park, IL.

Ellen Jaffe Jones is the author of "Eat Vegan on $4 a Day," "Kitchen Divided," "Paleo Vegan," "Vegan Fitness for Mortals," "Vegan Sex," and "Vegan for One." She's a nationally ranked sprinter and has placed in 139 5K or longer races for her age group since 2006 "just" on plants. As a personal trainer and running coach, she understands that living solo, a huge national trend, means trying to make balanced food choices. A 2-time Emmy winning TV investigative reporter for 18 years, she uses her journalism degree to bust every vegan myth out there. A popular vegfest and online circuit speaker, Ellen will show you how easy it is not to "mono-eat," even as an athlete.

Wife and husband Irina Kuznetsova and Karim Raimbekov gave up their corporate and medical careers, respectively, when they realized the healing powers of whole foods plant-based living and its positive impact on all life on the planet including animals and the environment. As the family switched to organic plant-based eating the ailments healed - postpartum depression, anxiety, stomach ulcers, high cholesterol, shortness of breath, autoimmune disorders, eczema, and many more. The couple opened Purple Sprout Cafe and Juice Bar in November of 2015 to introduce the surrounding communities of the North Shore and the Chicago Northwest Suburbs to healing plant-based food.

Now, Purple Sprout Cafe is an organic vegan restaurant that is open for breakfast, lunch and dinner, is a health food store and a wellness/educational center where a lot of culinary classes and various workshops are held. Purple Sprout also offers cooked, raw, and cooked/raw combo meal plans, and Ayurvedic/Nutritional Consultations. The menu is a fusion of world's cuisines - from American Burgers and Fries (HempBurger and sweet potato "grills", that is :), no deep-frying involved) to Mexican Burrito and Enchiladas, to French Crepes and Asian Stir-Fry, Indian Dosa and Dal, Middle Eastern Kebab (with tofu :) - all with a healthy twist, even some dishes from the native Eastern Europe and Kazakhstan. Most of the menu is or can be Gluten-free, with various customizations available such as oil-free, soy-free, garlic and onion-free. The Cafe features own extensive line of sugar-free mostly raw desserts, cream cheeses, proteins (such as Sprouted Lentil Chorizo, Cannellini Bean Sausage, homemade Seitan, Walnut Pate, Falafels, etc.) Our goal is to show people that plant-based food IS delicious.

Vegan Black Metal Chef combines his passions for vegan cooking and making metal music to create an awesomely unlikely combination that is informative, hilarious, and enlightening.

As a Vegan since 2000, and a musician since 2002, his quest to make awesomely amazing food, music, and blasphemy has culminated into a modern sensation. As seen in TIME Magazine, Anthony Bourdain’s “No, Reservations”, The Washington Post, and Wired Magazine, Among many others... hehas devoted followers in the US and across the world.

His cookbook and website contains vegan cooking instruction that focuses on cooking concepts rather than strict recipes, a series of YouTube videos that focus on single dishes as well as whole meal ideas, seeks to answer the question "what do vegans eat" set to a self made and recorded soundtrack of Black Metal music with comedy thrown in. The website also seeks to introduce people to bringing consciousness to their lives and all of their actions.

Alice & Friends’ was founded by Alice Lee in 2001. We are steadfast in our commitement to vegan living. Our lifestyle flows out of sincere respect for all living things and a desire to make as little impact as possible on our ecosystem. Our goal is to create a wonderland for vegans and those who want to adopt a plant-based diet.We want everyone to be able to enjoy flavorful, healthy, 100% vegan dishes. We aim to make a real difference in how people think about vegans. We want to make it easy for people who want to be vegan.

The Chunky Scones started as a passion for food and baking. Our first event was at St. Paul Church in the Pilsen neighborhood. We have come a long way ever since but we still keep the same passion to create delightfully vegan food for anyone interested in compassionate living or curious about a vegan diet.
